For those who aren't really familiar with the sousvide process, it's a method of cooking in which the meat is sealed in the air tight plastic bags then placed in water baths at a temperature-controlled environment for a long period of time. The chicken will be cooked evenly and because of the vacuum seal, all the flavours will still remain intact in the meat. The meat was tender and there is no need for a knife in this situation. Just enjoy the veloute by itself or mix with the sousvide chicken. So many great flavours in one plate!
Soft on the inside, crunchy on the outside. The White Mojo Croissant Burger is the talk of the brunch crowd. Inside the buttery croissant lay a golden fried soft shell crab with pickled cucumber, smoked eel, fried eggs, chipotle mayonnaise and chorizo dust.
